Wales: Brecon Beacons
Penderyn Whisky Distillery, located in the beautiful Brecon Beacons National Park, is the only distillery in Wales and the first to produce wysgi in the country in over a century. Four years after the first distillation took place at the new site, Penderyn single malt whisky was launched on St David’s Day (1 March) 2004 by HRH Prince Charles, Prince of Wales.
Small and attention to detail summarise Penderyn Distillery and its production process. The distillery is considered the smallest in the world, and produces just one cask of malted barley spirit per day using just one still, specially created for them by Dr David Faraday (a descendant of Michael Faraday, the renowned Victorian scientist).
The majority of spirit produced is aged in bourbon barrels (from Buffalo Trace and Evan Williams) and then finished in Madeira Wine barrels, sherry casks or casks previously used by Kilchoman Distillery on Islay to produce the distillery’s various signature whiskies. The remainder of the spirit produced goes towards the production of the distillery’s other products: Brecon Five Vodka, Brecon Gin, and Merlyn Cream Liqueur. These latter three products were introduced in 2007, and like the whisky, have won awards and both public and critical acclaim.
